The O's in Ruy's Life

Ruy has two O's in his life...Olivia and Olive Oil. I cannot tell you which one he values over the other, that's a tough call.

Ruy and his dad have a very strong preference for Olive Oil. They would slather it on anything and everything. Thank goodness that Olive Oil contains good fat, otherwise their hearts would be in danger.

I first saw them use olive oil with the dish Bacalao a la Vizcaina. They would first cook the fish using olive oil and as if this wasn't enough, they would still drizzle olive oil on the dish right before eating it. Ruy takes this a notch higher by slathering his bread with butter then stuffing it with olive oil - laden bacalao.

I personally love olive oil in pasta dishes. I sauteed a whole lot of garlic in olive oil then mixed in the Italian Sausages made by Ruy and voila a really tasty dish! I have also learned the beauty of putting chili in a bottle of olive oil and drizzling this on your pizza. This takes a simple dish to the next level!

While olive oil is generally used in Italian cooking it is slowly being used in our local dishes as well. Two weeks ago my lola cooked her mechado using olive oil and it turned a simple every day mechado dish into something more interesting.

Out of curiousity, how do you like your olive oil?

i love olive oil in pasta dishes as well, and any dish that has tomatoes in it. =)

I love Spanish and Portuguese extra virgin olive oils, they are more robust, IMHO, very good for dipping chewy country breads and for sprinkling over cooked paella, fried eggs, and most Spanish/Portuguese dishes. For sauteeing and salads I use light olive oil for the healthy benefits and because it has a neutral taste.
My family is just like Ruy, we drown our bacalao with olive oil too.:)

I love Olive oil too, I recently had some salad drizzled with Olive Oil and a little balsamic wine vinegar. :)

first u have the different classes of olive oil
EVOO or extra virgin- i used to aplsh onto a finished dish or soup
Virgin- is good for salads
Olive oil-- for sauteing
FAct: Greece uses more than 50 percent of their cultivated land to grow olive.

i use my olive oil practically everywhere :-)i love them my kitchen is empty without them

Love them a lot too! I also cook pasta with olive oil, ratatouille is one veggie dish that I like cooking because of olive oil and more...olive oil and basil are two of the main-stays in my kitchen..=)

I use olive oil in almost everything! Well, except Asian cooking like Chinese or Thai. But it goes really well with Filipino food -- using olive oil for adobo or bistek is fantastic! And have you tried frying an egg in olive oil? Heaven!

Joey: Frying using olive oil? I always thought that was a no no. Frying an egg in olive oil? This sounds so simple...yet you say it's good. Oh my goodness I'm giddy with excitement right now, can't wait to try it.

honestly, i don't like it much... I think I can only tolerate it with some balsamic vinegar and bread... or with lamb... other than that, i prefer not to have anything to do with it :D
