Dorylicious

Going around different food blogs just fills my mind with ideas and visions of cooking possibilities. While some are too daunting, too complicated or outright impossible to attempt, there are some that seduce, beckon and set off my imagination to try and find ways to make things happen.

This beautiful dish that I came across thanks to Ning's Heart and Hearth however is among those that didn't put me to sleep until I was able to cook it and satisfy my tummy's desire.

Fish Fillet With Vietnamese Caramel Sauce
(Recipe from Heart and Hearth)
This dish was simple but really good! The flavors so clean and light they seem to energize the tastebuds with the natural essences of rich earth and tranquil sea.

I used cream dory and followed Ning's recipe as faithfully as I could. The only modification/tweak I made was the sprinkling of ground peanuts at the end.

It was so worth the effort (and it didn't even take a lot!)

Em Dy: It was! The beauty of this dish is that it just takes a few minutes to make and the ingredients are available anywhere. The dory I used can be bought frozen from a lot of groceries. Just make sure to thaw and dry it completely before cooking. I encourage you to try it out if you're in the cooking mood.=)

Ruy, your description of the dish was so... so beautiful and accurate! Me nga, I ran out of words to describe this dish. I wanted to write : "Basta masarap!" But that would not do in a food blog :) Thanks for trying the recipe and am really glad you love it! This recipe is definitely a keeper. The ground peanuts was a good inspiration! They would provide the crunch and the texture to the dish. :)

I love Vietnamese food at restos and only recently tried cooking it at home when I became friends with the owner of an Oriental grocery who lent me her cookbook. The first thing I made was the caramel sauce served with fish similar to this dish you have here. Delicious!

dory is one of those fish that is very hard to overcook. that why its a nice fish to practice cooking with.
